What are your favorite pastries/baked goods that use almond flour?

My wife started making all kinds of keto desserts and snacks about two years ago - I avoid sugar at all costs and have for the past 4 years now and feel so much better for doing so.

I do disagree with you on the almond flour, PLX - I actually like the chocolate chip cookies made with almond flour better than most regular ones and there's a few other recipes she's done with it I dig but you know I'm far from normal lmmfao

Most definitely!!!!! You talking about with the chicken breast as the crust? When my wife told me how she was making it - and especially after I tasted it - I was shocked. I will get some good pepperoni for mine, she digs just the cheese and sauce but man, that stuff is good!

I use parmesan cheese as a replacement for the "pizza dough"..

Take a paper plate and place a piece of wax paper on it (or cut it to fit the plate).

1/4" think layer of shredded parmesan cheese - 90 seconds in the microwave. BAM !

Ok, so it's a bit different - the one she makes is canned and drained/rinsed chicken breast, parmesan, one egg, and possibly mozzarella. You form the crust then cook it for a bit and then add your toppings and bake it.

That'll work !

I use deli sliced chicken breast to make Keto lasagna.

Just substitute the pasta with the sliced chicken when you build the layers.. Creates the correct texture, and the chicken has almost no flavor next to the tomato sauce and herbs used for lasagna.

Oh wow! Thanks for that one because I've been making a separate dish for my wife when I make lasagna - I buy the keto lasagna sheets at HEB (they're hearts of palm sheets) and rinse and boil those slightly as they do have a slight taste if you don't but your way sounds like a better option and I'm going to have to try that.
